Southwestern Stew
 
 
Southwestern Short Rib Beef Stew 
 
Aah...the wonderful aromas of dinner cooking when you step into your home.
Is there anything better?
Easy too! When you use your crock pot.
Just a few steps of preparation and it can be done the night before
On a budget?
Beef short ribs are inexpensive, because they are a tough meat that takes hours of slow cooking. The toughest meats are the ones with the most flavour as the fat renders slowly...and...
It is very economical when feeding a large family.
 
6lbs of cut short rib beef pieces
1 cup BBQ sauce
1 cup water
1 cup hot salsa
1 tsp each garlic powder, oregano, Cajun spice, hot sauce
1 tbsp vegetable oil
1 cup red wine
 
 
 
Add the oil to a large preheated skillet or cast iron pan. Begin to sear pieces of meat on medium high, until they are caramelised on all sides. Since the bones are not completely flat, it will not brown perfectly on all sides. That's OK
 
 
 Work in batches, fitting tightly into pan to eliminate the possibility of any dangerous splatters, until all of the meat is browned.
 

Place browned pieces into the liner of the crock pot and continue until all pieces have been put in crock pot.


Pour in all of the sauces, seasonings and dried herbs. Pour out half of the oil from the pan. Saving some of the oil, deglaze the pan with the wine, by pouring the wine into the pan while the heat is still on.  Scraping the bits off the bottom of the pan with tongs or a spoon. Pour this into the crock pot.  This can be cooled to room temp. covered and refrigerated ready to go tomorrow morning.

 
 Place the crock pot liner into the unit and turn on to cook for 4-6 hrs.  The liquids will slowly simmer creating a fragrant delicious gravy that you can pour over rice or vegetables for a completely nutritious dish!
