CocoNana Fritters




Batter

1 egg

1tsp baking powder

1tbsp cornstarch

3/4cup coconut cream (coconut milk can be substituted)

1/4cup water

1tsp sugar

Mix batter together using a fork in a small wide container and set aside. 

Filling

1/2 pkg  cream cheese original or light

2tbsp coconut cream (or coconut milk)

3tbsp toasted desiccated coconut unsweetened

1  lime zested

1 tsp vanilla extract or coconut extract (opt)

2tbsp sugar

Combine filling ingredients into a small bowl and blend together using a spoon. Mixture will be lumpy. This can be prepared 2 days in advance.

12 6" spring roll wraps

1/2 pkg Philly cream cheese original or light

1cup large flake desiccated unsweetened coconut

1" vegetable oil for frying

Place a wrap pointy end facing you on a flat surface.  Place approx 1tbsp filling in a long line down the middle of wrap.  Place 1 piece of banana on top. Fold bottom corner over banana, fold top corner over other end.  see picture.  Fold over one side then the other rolling to tighten pkg. moisten last corner with water to seal pkg.  continue until all packages are finished.

Dip one pkg at a time into batter and roll into coconut. 
Preheat oil in skillet.  Add 3-4 packages at a time into oil and lightly fry on all sides until golden brown.

Serve immediately while hot
Add chocolate drizzle or caramel sauce if desired.

Honey Glazed Sticky Wings
with Smokey Yams, Potatoes & Garlic Aioli


These will leave everyone licking their fingers! Great for any night of the week or game night! and
They're baked making them low in Fat

4 lb chicken wings, split, remove wing tips
1/2c orange blossom honey(reg can be subbed)
3 T paprika
salt & pepper to taste
Place wings and all ingredients into a casserole dish large enough to hold 1 layer of wings. Mix with your hands and spread out in pan. Wash hands thoroughly.
Bake in a preheated 375F oven turning every 20 min. until golden brown for 40-45 min.  If it is not browned enough broil for 5 min on both sides.

Smokey Yams & Potato Wedges
2 large yams, peeled and cut into wedges
4 lg russet potatoes, peeled, cut into wedges
1T smoked paprika
salt & pepper to taste
olive oil or vegetable oil
On a greased or parchment lined baking sheet(for easy clean up) drizzle wedges with olive oil, sprinkle with seasonings and toss to coat.  Bake for 30-40min at the same time as wings. Turning every 15min to brown evenly.
Garlic Aioli
1 garlic bulb
2c greek yogourt or sour cream
Place garlic bulb on the oven rack while other foods are cooking and bake until soft to the touch.  Cool to the touch. Squeeze out pulp and mash with a fork.  Stir into the yogourt and season to taste.

Asian Wild Pacific Salmon


Asian Wild Pacific Salmon
What a great meal that starts BBQ season or camping
This looks fancy but it is cooked in 15min!


1 3lb wild pacific salmon

1 tbsp black bean sauce

1 tbsp hoisin sauce

1 tsp wasabi paste

1tsp jalepeno

1tbsp sesame seeds for top of salmon

2-3 lb baby mixed greens

1 lb blanched green beans

1 carrot shredded

1tbsp cilantro leaves, plucked (optional or parsley can be used)

Dressing:

1 tsp or more sesame oil

1 tsp grated ginger plus the juice

1/2 lime juiced

6  tbsp canola or grape seed oil

2 tbsp rice wine vinegar

1tsp honey

salt & pepper to taste



Spread wasabi, hoisin, black bean and jalepano on salmon let marinate for 30min.

Cook on greased  hot grill, it is best on BBQ for 10-15min or until it flakes apart. If you can't BBQ it can be cooked on a grilled skillet.

Mix salad greens, beans and carrots.  Mix dressing and pour over greens, toss. Serve with Salmon

Crunchy Cauliflower Medley


Yellow Cauliflower & Zucchini

Ok everyone, about mid week I get tired of "creating"
and would like to "create" something delish and easy.  So I found a cauliflower and some zucchini that were past their prime and decided to make something easy.  This came out so delish that I had to share it with you.  Fire up the BBQ!


1 head of cauliflower
1 zucchini
1/2 onion
3tbsp EVOO
1/4 cup broth (chicken or vegetable)
salt & pepper to taste
2 tsp dried or fresh oregano, or parsley


Preheat BBQ (hopefully you have some other juicy food to put on it!

In a large square of heavy foil, add all vegetables, mixing as you place them in the centre.  Drizzle the oil over top and pour in the broth.  The broth steams the whole pkg. which you need to fold up the edges. 

Don't fuss if the pkg doesn't close completely, it will steam and colour the veggies.  I place an aluminum foil dish that I recycle from pies and place on BBQ for 30min.  Lid closed.

Truffle Pizzelle


Truffle Pizzelle


1/2pkg philly
1/2 tub ricotta
3 T icing sugar
3-4 oz chopped dark chocolate

1/2 raw pizza dough

vegetable oil for frying
flour for dusting


Cinnamon Sugar:
1 cup granulated sugar
1tbsp cinnamon

Ganache:
1cup 35% cream, scalded
1/2 cup dark chocolate, chopped

On a lightly floured surface, roll out smaller than golf ball size pieces of dough.  Place a dollop of cheese mixture in middle of dough.  Gather edges around dough pinching together.  Roll seam side down on floured surface.  Continue until all filling is finished.


In a preheated medium size saucepan add vegetable oil to 350F or  you can check manually. Drop a pinch of dough  into the oil.  If it sizzles and turns golden it is ready. Add 4-5 dough balls at a time frying for only a few seconds on each side to crispy golden. Remove and roll in cinnamon sugar. Serve warm with Ganache.

Crazy Kale

Purple Kale



Wow look at this colour, vibrant purple & green!
Who wouldn't want to try this as a side dish for any meal.  The colour is enticing! We all need fibre in our diets and why not get it with this colourful addition.  Easy to make in just 10 min.



2 bunches of kale, washed and stems pulled off.

2 cloves of garlic, chopped

3 tbsp Extra Virgin Olive Oil

1 pinch of chili flakes

salt & pepper to taste


Fill a large pot of water 1/4 full.  Add kale, bring to a boil and cook for 5min, drain. 
Place the same pot on the burner on med. heat and saute garlic and pepper flakes in the oil until fragrant.  Toss in the kale and cook for 4-5min.

Done! you have a great side dish nutritious and delicious full of antioxidants rich in vitamins and minerals. Low in calories!!!
